Charcuterie Contest

August 19, 2017 at 2pm
Montgomery County Fairgrounds

Bring entries to the Home Arts Building for registration by 1pm. Judging will begin at 2pm.

All entries must be properly cooked/cured and chilled.

A minimum of 8 ounces must be entered. For Bacon, a minimum of 6 slices (no oz. requirement).

Please include ingredient list when appropriate.

Judging is based on:

  • Appearance
  • Aroma
  • Oxidation
  • Taste
  • Texture
  • Salt/spice level
  • Fat content

Charcuterie Contest Categories:

  • Pate (includes terrines, galantines, etc.)
  • Bacon (cured, smoked or not smoked)
  • Sausage (in casing, includes hot dogs)
  • Freestyle (must include description)
